1 pound bow noodles
1 tablespoon olive oil
3 Italian sweet sausages
1 red bell pepper
1 onion
1/2 teaspoon red pepper flakes
1 teaspoon dried oregano
2 cloves garlic, chopped
salt and pepper
1 (14.5 oz) crushed tomato
2 tablespoons fresh basil
2 tablespoons fresh flat parsley
1 large ball fresh mozzarella cheese
1 cup mozzarella
1/4 cup Parmesan cheese

Cook pasta according to package directions. In a large sauté pan (oven-friendly), heat olive oil over medium-high heat. Remove sausage from casing and cook until browned, about 5 minutes.
Add peppers and onions and cook for a few minutes until they are soft.
Add the red pepper flakes, oregano, and garlic. Cook for another minute. Season with salt and pepper.
Add tomatoes and simmer for 5 minutes. Add some basil and parsley. I keep a little for decoration.
Throw in bow noodles.
Add ricotta cheese.
Spread mozzarella cheese over pasta.
Sprinkle with Parmesan cheese.
Place the pan in a 400 degree oven for 10 minutes, until the cheese is melted and sticky. Garnish with remaining basil and parsley.
