Preheat grill to medium-high heat. Cut the onion into thick slices. Brush both sides with olive oil.
Roast the onions until they have grill marks and are starting to soften.
Place the onions on a sheet of tin foil on a baking sheet. Sprinkle the panko crumbles and blue cheese on top of the onions. Season well with salt and pepper.
Place the onion under the oven until the cheese is melted and the crumbs start to change color.
