3 cups mashed sweet potatoes
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla
2 eggs
1 stick melted butter

1/3 cup flour
1 cup chopped pecans

In a large bowl, combine sweet potatoes, sugar, salt and vanilla.
Beat with an electric whisk or stand mixer and add eggs and melted butter. Blend until light and fluffy.
Pour the sweet potato mixture into a casserole dish coated with cooking spray. Or you can make single servings. At this point, you can cover and store in the refrigerator for a day or two. You can also make the topping ahead of time and keep it in a container until you roast the sweet potatoes. Bake in a 375 degree oven for 25 minutes.
Meanwhile, start making the toppings. In a small bowl, combine brown sugar, flour and pecans.
Pour in melted butter.
Stir until combined.
Add the ingredients to the sweet potatoes and place in the oven for another 10 minutes. Let stand for 30 minutes before serving.
