Vegan Tortilla Dip Ingredients //
1 can (16 ounces) dried beans, or make your own.
3 avocados
1 can (8 ounces) non-yogurt cream (I like Tofutti’s).
1 package tortilla seasoning, or make your own
2-3 jalapeños, ribs and seeds removed, diced
5 tomatoes or a handful of cherry tomatoes, chopped
2-3 shallots, chopped
3-4 tablespoons fresh cilantro, roughly chopped (or parsley if you don’t like cilantro).

How to make // steps
Step 1: Preheat oven to 350 degrees.

Step 2: Line the bottom of an 8×8 glass baking sheet or large bowl with a layer of dried beans.

Step 3: Core and peel the avocado. Add lime juice to a bowl and mash. Spread on top of fried beans.

Step 4: Whisk together sour cream and tortilla seasoning and spread over avocado.

Step 5: Sprinkle the sour cream with the jalapeños, tomatoes and shallots. Place in the oven and heat for 15-20 minutes, until heated through.

Step 6: Sprinkle cilantro (or parsley) on top.

Step 7: Serve hot or at room temperature with tortilla chips for dipping.
